Bethesda Country Club is hiring a Sous Chef. The Sous Chef is responsible for assisting in maintaining established costs and quality standards to ensure superior service and to maximize profits. Promote the professional growth and development of the entire team. Foster strong interdepartmental relations and integrate the dining service department with the facility plan of operations. Train and develop a staff of cooks, dishwashers and interns that strive to maintain BCC excellence.

Essential Functions:

  1. Manages all food service operations and staff on a daily basis. Areas of responsibility include Banquet Operations, Club Grill, Family Grill, Pub, Café, and Cabana. Works with the food and beverage/culinary management team and associates to successfully execute all food operations. Strives to continually improve guest and associate satisfaction and maximizes the financial performance in areas of responsibility.
  2. Gathers and organizes information using a logical and systematic process; recognizes patterns and relationships in complex data; examines data to identify implications, problems and draws appropriate conclusions; generates alternative solutions to problems; evaluates strengths, weaknesses and consequences of alternative solutions and approaches to solving problems.
  3. Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws.
  4. Assist the Culinary Team in the preparation of items required for special menus, Banquet and Catering events and the Restaurant menus. The Sous Chef position is an equal mix of leadership responsibilities along with hands-on work to help ensure a successful service or event execution.
  5. Participate in employee meetings and training programs.
  6. Maintain food cost while ensuring quality standards.
  7. Assist in the development and ongoing improvements of company food inventory controls.
  8. Ensure HACCP controls along with proper storage and use of food.
  9. Assist in the creation and design of menus.
  10. Responsible for covering any duties left by vacant position.

Requirements:

  • 5-7 Years' experience in heart of house in restaurants, clubs, hotels and/or banquet operations.
  • 2 Year Culinary Degree Preferred.
  • Demonstrate high level of focus and energy to accomplishing goals.
  • Detail oriented and able to see a total situation quickly and clearly.
  • Take responsibility for all challenges and encourage an environment of problem solving.
